Oatmeal cookies and snickerdoodles are two of my favorite treats, and these cookies taste like a mix between the two. However, since you crush the oats before adding them, it’s a little bit deceptive. And they’re easier to make than snickerdoodles since you don’t have to roll the dough in cinnamon and sugar – it’s all incorporated in!
Cinnamon Oatmeal Cookies Ingredients
2 cups oats, rolled
1 1/2 cups flour (all-purpose)
1/2 cup flour (whole wheat)
4 tsp cinnamon powder
1 teaspoon of baking soda
a half teaspoon of cream of tartar
a quarter teaspoon of salt
1/2 cup softened butter (at room temperature)
1/2 cup shortening with a buttery flavor
1 1/2 pound of sugar
1 tsp vanilla extract
Cinnamon Oatmeal Cookies Recipe
Preheat the oven to 400 degrees Fahrenheit. Use parchment paper or silicone mats to line cookie sheets.
Process the oats until finely ground in a food processor or blender. Set aside ground oats, all-purpose flour, whole wheat flour, cinnamon, baking soda, cream of tartar, and salt in a large mixing basin.
With an electric mixer, whip the butter and shortening together for approximately 2 minutes in another large mixing basin. Add in the sugar and continue to beat for another minute. Add the eggs and vanilla extract and beat for another 2-3 minutes.
Mix only until the dry ingredients are mixed with the butter mixture. Scoop out the dough with a cookie scoop and put 2 inches apart on prepared cookie sheets. Bake for 8-9 minutes, then cool on cookie sheets for a few minutes before moving to a wire rack to cool fully.
