Khmer rural cuisine is delicious Chicken Sweet Sour Soup with Water Spinach. Fish, frog legs, eel, turtle, or snail are also used in this soup by Khmer Krom people.


2 tblsp. extra virgin olive oil    
2 garlic cloves, minced    
1/2 cup lemon grass, minced (fresh or frozen)    
1 pound (450 gram) chicken, chopped into bite-size pieces    
a quarter teaspoon of salt    
6 quarts water    
1 tablespoon Knorr tamarind powder or 2 teaspoons tamarind juice    
sugar (one spoonful)    
2 tblsp. fish sauce    
1 pound (450 g) asian water spinach *ta-kuon*, sliced into 3 inch lengths    
1 green onion stalk, chopped    
3 spicy chili peppers, diced, or to taste (option)    
a handful of finely chopped fresh herbs, fragrant basil leaves, and *ma-om* rice paddy herb    

To prepare Chicken Sweet Sour Soup with Water Spinach, follow these instructions.

  1. When a big soup pot is heated, add the oil and garlic.
  2. Remove the roasted garlic from the heated oil and place it in a small bowl, then set it aside.
  3. In a soup pot with heated oil, sauté lemon grass, chicken, and salt until the chicken flesh becomes light brown.
  4. Cook until the chicken flesh is soft, then add water.
  5. Tamarind, sugar, and fish sauce are used to season the soup.
  6. Stir in the Asian water spinach and simmer until the soup is boiling.
  7. Green onion, herbs, roasted garlic, and spicy pepper are all good additions to the soup.

Serve immediately with rice.
