The Honeycrisp apple is my personal favorite for baking (and eating!). These apples are very crisp, and they hold up nicely in the oven. Honeycrisp apples may be pricey at times, but Fuji apples work just as well and are a wonderful substitute. Simply avoid using a soft apple (such as Red Delicious) since the taste isn’t as intense and the softer apples tend to get mushier when cooked. These cookies may also be made with dried apple bits, but I much like fresh apples!
Is it possible to freeze cake mix cookies?
Yes, cake mix cookies can be frozen. The cooked cookies may be frozen by allowing them to cool fully before wrapping them in plastic and putting them in a Ziplock bag in the freezer. I like to freeze cookie dough in ready-to-bake balls so that I may enjoy my cookies “freshly baked” when I’m ready to make them. To do this, you’ll need to:
- Make balls out of the cookie batter (cake mix cookies tend to be a little sticky in dough form so you may want to chill the dough for about an hour to make this step easier).
- Set the cookie dough balls on wax paper on a cookie sheet and place in the freezer for approximately an hour, or until they are completely frozen.
- Place all of the frozen cookie dough balls in a Ziploc bag or other freezer-safe container. Return them to the freezer until you’re ready to bake them.
- When you’re done, space the cookie dough balls 2 inches apart on a prepared baking sheet. I prefer to defrost the balls for approximately 10-15 minutes before baking them according to the package directions. Enjoy!
