Bread Upma (Bread Usli, Bread Upakari/Phan)

Bread Upma is a traditional Indian dish made by mixing bread with spices and grated coconut. It’s a delicious snack that can be eaten as breakfast, lunch, or dinner.

The bread pulav recipe is a delicious and easy to make dish, which can be made with any type of bread. It is also called as Bread Upakari or Usli in Gujarati.

Do you have any leftover bread at home? Here’s a fast and simple way to use up any stale bread you have on hand. In Konkani, it’s known as bread usli, bread upakari, or bread phaan.

Toss bite-sized bread slices with caramelized onions and a flavorful spice for a tasty breakfast or tea time snack. A simple seasoning of fresh green and dried red chillies, mustard, curry leaves, and urad dal, combined with mustard, curry leaves, and urad dal, gives stale bread pieces an amazing flavor and softens them in the process. The sweetness is provided by caramelized onions and freshly shredded coconut.

A simple recipe to use up any leftover bread that has been sitting on the shelf for a few days and is going to go bad the following day. Bread upma is used to empty any stale bread at home (bread becomes a bit hard after 2 to 3 days). 

In Konkani, upakari means stir fry. In Konkani, everything seasoned is referred to as usli. Seasoning is referred to as phan in Konkani. In Konkani, this is known as breadda upakari/usli/phan.

The sweetness of the bread contrasts with the spiciness of the spice in upma made using sweet bread. This teatime snack is easy to make and takes just a few minutes to prepare.

P.S. For a healthier twist, use brown or whole wheat bread.


Ingredients:

4-6 pieces of bread 1 large onion a half teaspoon of mustard seeds 3–4 tbsp. olive oil urad dal, 1/2 teaspoon 2 curry leaves (leaflets) 1-2 green chili peppers 1 red chili, dried season with salt to taste 2 tablespoons coconut grated (optional) Turmeric, a pinch

Time to prepare: 10-15 minutes


Method of Preparation:

With or without the crust, cut bread into bite-sized pieces. You may cut them into cubes or just shred them with your hands into bite-sized bits. 

Sprinkle salt evenly over the bread slices and toss thoroughly.

As thinly as possible, slice the onion.

In a wok, heat the oil and mustard seeds.

When they begin to pop, add the urad dal, sliced green chili, and dry red chili chopped into small pieces and continue to cook until the urad dal begins to brown. 

Fry for a few seconds after adding the curry leaves.

Now add the sliced onion and a pinch of salt to speed up the cooking process, and sauté until transparent and beginning to brown.

Now add the turmeric and stir well.

Then toss in the bread cubes and thoroughly combine.

Cook for a few minutes. Salt should be checked and adjusted as needed.

Mix in the shredded coconut well. 

Remove from the heat and serve immediately.
