Baked Chicken with French Onion Soup Mix

Chicken and French Onion soup may sound like the perfect combination, but it’s not one that you would expect to work. French Onion Soup is traditionally a bready soup made with flour, milk and butter. The butter and milk are needed to make the onion soup thick enough to stand on its own. But the butter and milk are also a source of calories. To make the soup a bit healthier, replace the butter and milk with corn starch and mix it with some cooking water. Use a pastry blender to mix the corn starch with the flour. This will make the mixture thicker. Combine the chicken breasts and juices with the thickened soup. Drop the mixture into a greased casserole.

How do you know when it’s ready to eat?

You may test the meat for crimson or clear fluids by poking it. This technique is only applicable to chicken. When you pierce a chicken breast and the fluids that come out are clear, you know it’s done. If the fluids are crimson or reddish in hue, the chicken has to be cooked longer. Cook until the internal temperature reaches 165 degrees F, if you have a meat thermometer. (This one gets rave ratings and is a popular choice among users!)

Sometimes you’re simply weary at the end of the day and need to put something together quickly so you can go out the door. This, therefore, is your response. However, just because you need something fast doesn’t mean you have to forego nutrition or flavor. This meal is jam-packed with both and comes together quickly. This baked chicken is now on our monthly menu, which is certainly a good thing!

*We used Trader Joe’s frozen green beans for this recipe. Fresh green beans would add even more richness to this meal, but frozen green beans work just as well and absorb up the flavors of the delicious French onion soup mix.

Growing up, my mother used to make French onion soup in the wintertime. As the weather gets colder, she makes it a little sweeter by adding a little less sugar to the recipe. The result is a recipe that tastes like a dessert, but is actually a savory soup that is full of flavor. The ingredients are pretty simple, but you have to use real onion soup mix and real onion soup powder, not just the onion soup mix..
