In this post, I will show you how to make a Chicken Pot Pie. I will also add some of my own suggestions that I feel make it a little more interesting. So read on for a fun little chicken pot pie that you can make with your family or friends.

We love our food. We just hate the way we have to eat it. Why do we have to eat an entire chicken to enjoy a little bit of filling pie? Why do we have to eat this meatloaf to get the protein? Why do we have to eat a whole loaf of bread to get the meal? We want food to be part of our everyday lives, not just something that is in between meals. We want the convenience of the fast food, the comfort of home cooking, and the deliciousness of the homemade.

This recipe is a great way to enjoy the flavors of a chicken pot pie but in a low carb, gluten-free, vegan, and healthy form. It is made with cauliflower as the crust and comes together in under 30 minutes.. Read more about chicken pot pie crust and let us know what you think.

Recipe:

2 pound shredded cooked boneless, skinless chicken Salt black pepper, freshly ground 4 tablespoons oil (vegetable) 4 TBS UNSALTED BUTTER (ROOM TEMPERATURE) 4 tblsp flour (all-purpose) 1/2 pound red-skinned potatoes, peeled and cut into 1/2-inch chunks peeled and cut into 1/2-inch pieces 1/2 pound carrots 1 medium peeled and sliced yellow onion 2 minced garlic cloves a pinch of cayenne pepper (optional) 2 cups chicken broth (canned) of excellent quality 1 to 2 tbsp heavy cream 1/2 cup fresh peas (shelled) or frozen peas frozen puff pastry (about 1/2 pound), defrosted according per package directions a single big egg

Directions:

In a big, tall pot, melt the butter. Before adding the chicken stock, mix in the flour to ensure there are no lumps. Cook this mixture for 5-10 minutes while stirring constantly. Dip the back of a spoon into the sauce and run your finger down the spoon to check the consistency. The sauce should stick to the spoon rather than running over the swipe you made.

Over medium heat, continue to simmer and whisk the sauce until it reaches the desired consistency. Season with salt, pepper, and cayenne pepper to taste (if using). Taste the sauce to determine whether it needs more seasoning. Now add the cream and whisk well to blend. In a separate bowl, combine the shredded chicken, potatoes, carrots, onion, and garlic. Cook the veggies for 2-3 minutes in the sauce. Place the filling in a clean dish and refrigerate for 1 hour, or until completely cold.

Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).

Use a little more flour to roll out the puff pastry so it doesn’t cling to your work surface. To cut out the dough, use a bowl or plate that is approximately an inch bigger than the dish you will be cooking your pot pie in as a reference.

Spoon the cold filling into your dish with care.

In a small bowl, crack the egg and add a spoonful of water or cream. Brush the egg wash over the edges of your plate with a fork. Brush the rim of your plate with a bit of your egg wash. Place your puff pastry on top, taking careful not to strain it. To ensure that the edges of the pastry are secure, gently press them against the lip of the dish. Then use additional egg wash to brush the top and sides. Bake your pot pies for 25-35 minutes on a large baking sheet. Until the pastry has a beautiful golden, rich brown color and no gray raw spots remain.

Allow 5 minutes to cool before serving.
