2 packages 4 oz (113 g) dry tapioca pearls, peas, or shredded tapioca, soaked for 30 minutes in boiling water, drained    
5 gallons of water    
palm sugar, 2 cups    
a quarter teaspoon of salt    
1 teaspoon vanilla extract (pure)    

Making Cambodian Mung Bean Pudding: Step-by-Step Instructions

  1. Put the mung bean, tapioca pearls, and water in a medium saucepan and simmer until the mung bean and tapioca are soft. Stir in the palm sugar, salt, and vanilla extract, and boil until the water is bubbling.
  2. Serve warm or hot.
