Melons are common during the winter. In the south, we eat them in salads, while in the north, we enjoy them as soup. This recipe, tastes delicious, with a bit of sweetness, from fruits like melon, to the pork, and a touch of spice from the ginger.

This soup is a hearty and warming dish that is perfect for winter days.  To make this dish you will need the following: 2 boneless pork chops (pork loin, pork shoulder, or pork loin chop) 2 cups pork fatback (pork belly has less fat, it’s also more expensive) ½ cup water 2 cups winter melon (honeydew melon is also good for this dish) 1 cup onion, chopped 1 cup celery, chopped 1 cup green bell pepper, chopped 1 cup jalapeno peppers (stems removed) 1 cup carrots, chopped 2 cloves garlic, minced 1 bunch thyme (fresh thyme if possible)

Winter melon, or more commonly, the rind, is something I’ve always wanted to try. In case you’re wondering, the rind is the peel of the fruit. The white flesh of the melon is not only edible, but is quite tasty and a great source of vitamins and minerals. But is a white melon a winter melon? I don’t know about you, but when I think of winter, I don’t think of sweet, juicy melons. If anything, I associate winter with a waning of the season, and have never associated melons with it.

Soup made with winter melon, ground pork, and shrimp is tasty and easy to make. You can make it at home if you combine winter melon with ground pork.


Grounded pork, 1/2 pound (225 gram)    
1/2 pound (225 gram) shelled, deveined, and ground shrimp    
1 teaspoon sauce de poisson    
black pepper, 1/4 teaspoon    
1 green onion stalk, minced    
4 quarts water    
4 cups peeled, seeded, and cut into cubes winter melon (about 900 g)    
1 teaspoon of soy sauce    
sugar (one spoonful)    
a quarter teaspoon of salt    
2 green onion stalks, chopped    

Directions to make Winter Melon Soup with Pork

  1. Set aside a small dish containing ground pork, ground shrimp, fish sauce, black pepper, and onion.
  2. Fill a soup pot halfway with water and bring to a boil.
  3. Using a spoon, scoop prepared ground meat into boiling water, continue until meat is gone, and simmer until meat is soft.
  4. Cook until the winter melon is soft, about 15 minutes.
  5. Fish sauce, sugar, and salt are used to season the dish.
  6. Garnish with green onions.

Serve immediately with rice.
