I’ve been experimenting with low carb diets lately, and have found that I’m constantly eating low carb dishes and snacks, and finding myself wanting more. After a while, it’s easy to ignore the cravings, and start eating like the rest of the world. But, that doesn’t mean I don’t enjoy low carb foods. In fact, I think they can hold their own in a variety of ways.
You can’t totally cease living your life, and there will inevitably be times when alcohol is involved. So, create this Mojito with Low Carbs to enjoy in a more refined manner while staying on track with your diet! This fast and easy keto friendly drink is made with fresh mint, substitute sweeteners, vodka, and club soda! It’s ideal for entertaining, dating evenings, or just unwinding after a hard day at the office!
What Makes A Mojito So Special?
Because Matt and I aren’t lovers of rum, we opted to make a vodka mojito instead, and believe us, it’s fantastic! Apart from the alcohol, it’s a pretty easy cocktail to make: simple syrup, mint leaves, ice, and club soda on top! We had to modify things up a little since simple syrup isn’t low carb enough to make this drink keto-friendly. We tried creating the simple syrup, but found that using powdered erythritol and stevia drops was the best method to get the sweetness of a traditional mojito. You can now create this low-carb cocktail in under a minute without having to bother with preparing a syrup on the stove!

What am I allowed to drink? This is a frequently asked question! When we want to remain as low carb as possible, we always go for booze, particularly vodka. We’ll combine vodka, Zevia, diet Coke, seltzer water, and lemon wedges, or any sugar-free beverage available at the store. The liquor of choice is entirely subjective, so if you like whiskey or tequila, go for it! If you have a little more space and don’t want to drink the whole bottle, you may still enjoy wine. Most drier wines have about 4-5 carbohydrates per 5oz glass, so keep watch if you choose the wine way!

Add mint leaves, erythritol, and lime juice to the bottom of a class and wedge them together. Muddle all three items together using the bottom of a broad spoon or something similar (squish them around to release the mint flavor and combine the lime juice and powdered erythritol).
