Sugar cookies are a Christmas must-have, but I don’t always have the time or energy to lay out the dough, cut out the cookies, and manually frost each one. It’s time to break out the sugar cookie bars!
I’ve tried a lot of different sugar cookie bar recipes over the years, and although most of them are fine, this one is fantastic. The thickness is perfect. The texture is perfect — not dry or crumbly, but thick and velvety. Also, the icing is delectable! Even if you aren’t a lover of sugar cookies, you should give this recipe a try.
What’s the secret to the finest sugar cookie bars?
Because the sugar cookie batter contains cream cheese, I believe this recipe is better to all others. The rest of the ingredients are quite conventional, but the cream cheese gives these cookie bars the right texture.
And although the almond extract isn’t strictly required, it does give a wonderful taste, so don’t skip it!
Also, be sure to follow the instructions for beating the dough. It may seem like you’re mixing for longer than usual, but trust me when I say the results are worth it!

1 cup softened butter (at room temperature)
1 1/2 pound of sugar
8 oz. softened cream cheese (at room temperature)
1 egg
a half teaspoon of almond extract
1 teaspoon extract de vanille
a half teaspoon of baking powder
flour, 2 1/2 cups
Frosting:
1/2 cup softened butter (at room temperature)
4 oz. softened room temperature cream cheese
3 1/2 CUP SUGAR (POWDERED)
3-5 tablespoons milk (start with 3 and add more to desired consistency)
1 tsp vanilla extract
colorants for food
Sugar Cookie Bars: A Step-by-Step Guide
Preheat the oven to 350 degrees Fahrenheit.
For approximately 4 minutes, whisk the butter, sugar, cream cheese, and egg in a large mixing bowl.
Beat for another minute after adding the almond extract and vanilla.
Mix in the flour and baking powder for another 2 minutes.
Bake for 20 minutes after pressing the dough into a buttered 10′′X15′′X1′′ pan. Allow the bars to cool before applying the icing.
Combine all of the frosting ingredients in a mixing bowl and whisk until creamy. After the bars have cooled, frost them, then slice and serve.
