I’ve been using a 1/4 pound package of ground beef in my meatballs since I was a kid. I’ve made them with beef, pork, chicken, turkey, and even vegetarian ground beef. I’ve never made a cheese meatball, until now. The added flavor of the cheeses cuts the richness of the beef and makes the meatballs much more palatable.
Today I’ll be making a super easy, super delicious recipe for cheese taco meatballs. I love eating them for dinner, and I love making them for the kids. But the truth is, I don’t always love their taste, or the fact that I need to prepare them. So today I’m here to tell you that there is a way to make them easy, delicious, AND healthy too.
Cheese Taco Meatballs are a delicious twist on your typical meatball. The meatballs are coated in Supreme Cheddar Cheese and crispy taco seasoning, simmered in a delicious homemade sauce. Here’s what you’ll need!
12 SERVINGS CHEESE STUFFED TACO MEATBALLS

Taco Meatballs with Cheese Stuffing
INGREDIENTS
1 pound beef mince 13 cup chopped onion 14 cup minced cilantro taco seasoning (2 tblsp.) a single egg 12 cup tortilla chips, crushed 12 identical chunks of 14 pound jack cheese Vegetable oil
Salsa, cilantro, and sour cream are used as garnishes.
PREPARATION
Combine all ingredients in a mixing bowl, except the cheese and vegetable oil. Stir until everything is well mixed. Grab approximately a golf ball-sized quantity of the ground beef mixture with your hands and flatten it slightly in your palm. Place 1 cube of cheese in the center of the meatball and press the beef around it so the cheese is completely coated and in the center. In a cast-iron pan, heat a thin coating of vegetable oil over medium to medium-high heat. Cook the meatballs once the pan is heated. Cook them through by rotating them halfway through to brown both sides. Remove the meatballs from the skillet after they are completely cooked and browned, then serve with salsa, sour cream, and cilantro. Enjoy!
