At least once a month, we bake chocolate chip cookies, and each batch doesn’t last long! I improved our favorite chocolate chip cookie recipe by adding one easy ingredient. Caramel. Seriously! It’s a given that you must attempt them.
Ingredients for Caramel Chocolate Chip Cookies
To create these cookies, you’ll need the following ingredients:
–softened butter– I use 1/2 salted butter, but unsalted butter is also OK.
–butter flavored shortening- is available in the baking section. I like the cubes that can be sliced to precise quantities, such as 1/2 cup in this instance.
–you’ll need 3/4 cup each of brown sugar and granulated sugar.
–2 eggs
You’ll need 2.5 cups of all-purpose flour for this recipe. You may also use bread flour.
–for flavor and leavening: salt, baking soda, and baking powder
–semi-sweet chocolate chips: 3/4 cup semi-sweet chocolate chips would enough. Chocolate bits may be substituted if desired.
–salted caramel chips: they are becoming considerably more common all year! If you can’t locate them, butterscotch chips will suffice.
–SOFT caramels– Look for Werther’s SOFT Caramels packs. These are often seen at the grocery store checkout line. Check to see whether they’re the SOFT caramels! You’ll need two bags.
Caramel Stuffed Cookies: A Step-by-Step Guide
Preheat the oven to 375 degrees Fahrenheit. Using parchment paper, line a cookie sheet. These parchment sheets are what I use– I adore them!
Cream the butter and shortening together with an electric mixer. Mix in the sugars and eggs one more time.
Combine 1/2 cup flour, baking soda, baking powder, and salt in a mixing bowl. Mix thoroughly. Mix in the remaining flour until everything is well mixed. Combine chocolate and salted caramel chips in a mixing bowl. If you can’t locate them, 1 1/2 cup semisweet chips would suffice. They’re delicious and can be found at my local Kroger grocery shop.
Take 1 unwrapped caramel and put it in the middle of a heaping spoonful of dough (I use this cookie scoop here). Adjust the dough around the caramel to thoroughly coat it.
Bake for 9-10 minutes with 9 dough balls on a cookie sheet.
Transfer to a cooling rack after baking. Allow to cool for a few minutes before serving.
