Summer time Cauliflower Salad is a recipe that can be found here in this post. My mother in law gave me this recipe and I love it! I have tried several other versions but this one has been my favorite. It is very easy to make and is perfect for picnics, barbecues, and potlucks.
May the fourteenth be as magical as the first. This is our third year of backyard barbecuing and we are falling in love with all of the great flavors. This year we had a huge crop of cauliflower that we bought at the Farmers Market and we decided to try something different. We had just picked a few hot days for barbecuing so we thought we would give it a try. We had a New York Strip steak marinating in some Rosemary, Garlic and Pepper mixture. We had a block of Cauliflower sitting around that we wanted to use up and we decided to try it out with a new recipe. We chopped up the Cauliflower and mixed in some of the steak marinade and added some spinach
Cauliflower is a versatile vegetable with endless possibilities. It is a good source of vitamins C, K, and folate and a good source of fiber and protein. Cauliflower is also an excellent source of sulforaphane, a natural chemical that may help fight many cancers, protect the liver and help fight inflammation, in addition to being an excellent source of potassium and a good source of iron.
Cauliflower is one of our year-round favorite low-carb veggies. Cauliflower salad, on the other hand, is very helpful when grilling outdoors on hot days. This recipe goes well with burgers and hot dogs, and it’s an even better alternative for potato salad, which is heavy in carbs and carbohydrates. The recipe I provided is just excellent in every way, but feel free to add more crunch and protein with the bacon and additional eggs!
