Alton Brown’s brined turkey is a traditional Thanksgiving dish. This recipe has been passed down for generations, and it’s the perfect way to cook turkey with a little more flavor.

The greatest Thanksgiving turkey recipe I’ve ever used is Alton Brown’s Turkey with a Brine. Of course, I don’t believe Alton can make a mistake!

 

My favorite Food Network celebrity is him.

Brined Turkey

I believe you are underserving yourself and your Thanksgiving guests if you have never prepared a brined turkey. The brine actually breaks down the turkey’s stiff fibers, making it extremely moist and soft after roasting!

The brining process has a scientific basis, but it isn’t what I’m interested in. What counts is that the turkey is soft, juicy, and extremely delicious thanks to Alton’s aromatics.

Alton Browns Brined Turkey

The flesh from this brined turkey is juicy and tender. Unlike other recipes, the breast does not come out dry.

Course Description: Main Course

American cuisine

12 servings

  • 1 frozen full 14-16 pound turkey

Brine for The

  • 1 cup salt (kosher)
  • 1/2 cup brown sugar (light)
  • veggie stock (1 gallon)
  • 1 tsp black peppercorns
  • 1 1/2 tablespoons berries of allspice
  • 1 1/2 tablespoons candied ginger, chopped
  • 1 gallon severely iced water

In the Interest of Aromatics

  • 1 sliced red apple
  • 1/2 sliced onion
  • 1 stick of cinnamon
  • 1 quart of water
  • 4 stems rosemary
  • 6 sage leaves

2–3 Days Prior to Roasting

  1. Start thawing the turkey in the refrigerator or a cooler set to 38°F.

  2. In a large stockpot over medium-high heat, combine the vegetable stock, salt, brown sugar, peppercorns, allspice berries, and candied ginger. Bring to a boil, stirring periodically to dissolve solids. The brine should then be removed from the heat, let to cool to room temperature, and then refrigerated.

The Night Before the Big Day of Roasting

  1. In a 5-gallon bucket, combine the brine, water, and ice. Place the thawed turkey breast side down in the brine (with the innards removed). If necessary, weigh down the bird to ensure it is completely submerged in the brine, cover, and refrigerate or put in a cold location for 8 to 16 hours, rotating the bird halfway through brining.

Day of the Roast

  1. Preheat oven to 500 degrees Fahrenheit. Rinse the bird inside and out with cold water after removing it from the brine.

  2. Remove the brine and discard it.

  3. Place the chicken on the roasting pan’s rack and dry it with paper towels.

  4. In a microwave-safe dish, combine the apple, onion, cinnamon stick, and 1 cup of water. Microwave on high for 5 minutes. Along with the rosemary and sage, place the soaked aromatics in the cavity of the turkey.

  5. Tuck the wings beneath the bird and generously cover the skin with canola oil.

  6. Roast the turkey for 30 minutes at 500 degrees F on the lowest rack of the oven.

  7. Insert a probe thermometer into the thickest portion of the breast and wrap a foil triangle around it. Then turn the oven down to 350 degrees Fahrenheit.

  8. Set the thermometer alarm to 161 degrees Fahrenheit (if one is available).

  9. Roasting time for a 14 to 16 pound chicken should be 2 to 2 1/2 hours.

  10. Allow the turkey to rest for 15 minutes before carving, loosely covered with foil or a big mixing bowl.
