To prepare the chicken

    • 500 grams of chicken wings
    • cornflour (50g)
    • a big piece of finely grated ginger
    • serve with sesame seeds and chopped spring onion
    • frying oil made from vegetables

To make the sauce

  • 6 tbsp sugar (dark brown)
  • 2 smashed big garlic cloves
  • 2 tablespoons soy sauce
  • grate a little bit of ginger
  • 2 tablespoons sesame oil
  • 2 tablespoons gochujang (Korean chilli paste)

Instructions

  1. In a saucepan, combine all of the sauce ingredients and cook over low heat for 3-4 minutes, or until syrupy. Take the pan off the heat and put it aside.
  2. Season the chicken wings with salt and pepper, as well as grated ginger. Toss the chicken in the cornflour to coat it evenly.
  3. Heat approximately 2 cm of vegetable oil in a large frying pan over medium/high heat.
  4. Fry the chicken wings for 8-10 minutes, rotating halfway through. Remove the pan from the oil and set it on kitchen paper to absorb the excess oil. Allow for a 2-minute cooling period.
  5. Reheat the sauce and mix in the fried chicken pieces.
  6. Place in a bowl and garnish with sesame seeds and chopped spring onions.
