I am not a foodie, the word does not entice me. that’s why I was hesitant to write a food blog, but the demand is quite high and I feel I should introduce you to this. I have a quick story to share, one that’s been with me since I was a child. My dad is a foodie, he loves cooking. While we were all toddlers, my parents used to take us to the market on Sundays and let us pick out whatever we wanted to eat. We knew what we wanted but refused to accept what was suggested. We never went back for the second choice. It all happened in tandem with my dad’s unending devotion to tandoori chicken. He would get up at 5 am

Dahi sev puri chaat is another famous chaat, snack, and street dish that is popular all across India as dahi puri chaat and is appreciated by all ages, from children to the elderly. It is often eaten in the evening as a snack with friends and family. The only difference between dahi sev puri chaat and dahi puri chaat is that sev is added more and is completely coated with yoghurt. Dahi puri chaat is known as dahi sev batata puri chaat in Mumbai, where batata means potatao and aloo means aloo in Hindi. Crispy puris filled with potato and chutneys, coated in yoghurt, sprinkled with spices and sev and other ingredients, giving us a unique flavor and taste. Puris are the same as those used for pani puri (golgappa), which are circular and crispy and provide a satisfying crunch when eaten.

Green chutney, also known as hari chutney in Hindi, and meethi chutney made with tamarind, jaggery, and dates, which I sometimes make with tamarind and sugar. You may use any sweet chutney as both taste great. You may keep it in the fridge or freeze it until you’re ready to make chaat. Spices, pomegranate, onion, tomato, coriander leaves, and cooked chana (chickpea) are among the other components (optional).

Preparing dahi sev puri chaat is simple if all of the above ingredients, such as green chutney, tamarind and dates chutney, boiled potato, sev (fried gram flour) and store-bought crispy puris, are prepared ahead of time and ready. Then all you have to do is assemble and serve, or let your family or friends assemble according to their preferences. The most delectable and thrilling part is when we bite into this delectable and mouth-watering chaat and experience the crisp bite of puris and sev, the softness of the yoghurt, the tangy and sweetness of the chutneys, and the spiciness of the spices.

Time to prepare: 15 minutes (excluding preparing chutneys)

No cooking time is required; all that is required is the assembly of the components.

Chaat, snack, or street food from North India

2 to 3 people

Medium spiciness, sweet and tangy at the same time

Ingredients

    • 20 golgappas (crispy puris) or as needed
    • 1 cup boiled chickpeas

To make the potato mixture

    • 2 medium boiled potatoes
    • a sprinkle or 1/4 teaspoon chili powder
    • a sprinkle or 1/4 teaspoon roasted cumin powder
    • a sprinkle of chaat masala
    • a pinch of black salt
    • (Optional) salt – to taste

To make the yoghurt combination

    • 1 1/2 cups whisked yogurt
    • 2 tbsp sugar
    • a sprinkle of chaat masala
    • a sprinkle of roasted cumin powder
    • a pinch of chilli powder
    • a pinch of black salt
    • a pinch of salt (to taste)

Ingredients not listed

  • 1/2 cup green chutney
  • 1/2 cup sweet tamarind chutney
  • 1 teaspoon cumin powder (roasted)
  • 1 tsp chaat masala
  • 1/2 teaspoon red chili powder
  • 1/2 cup chopped fresh coriander leaves
  • 1 onion (chopped)
  • 1 tblsp. tomato (chopped)
  • 1 cucumber, chopped
  • As needed, Sev
  • 1 peeled pomegranate (anar)

Method

  • Cut the tomatoes in half, remove the pulp, and coarsely chop.
  • Cut the cucumber in half, scoop out the inner flesh with the seeds, and finely chop.
  • Finely chop the onion and coriander leaves and set aside.
  • Whisk together the spices, salt, and sugar in the yogurt until smooth. It may be kept in the refrigerator or used right away.
  • Mash the potatoes, stir in the seasonings, and set aside.
  • Place 6 to 7 puris on each serving dish, depending on the size of each puri. Make a hole in the center of the puri and gently break it, since it may fracture the other sides as well.
  • Fill each puri with mashed potatoes. Put some chickpeas, chopped onion, tomatoes, and cucumber on top of it.
  • On the onion mixture, sprinkle cumin powder, chaat masala, and a pinch of red chili powder.
  • Inside the puris, drizzle a little green chutney and sweet tamarind chutney to taste.
  • Chilled sweetened yoghurt may be used to top or fill the puri.
  • Again, add cumin powder, chaat masala, and a pinch of red chili powder (optional).
  • Drizzle a few onion 1tsp (optional), cucumber 1tsp (optional), and tomato 1tsp (optional) on top of the sev or cover the whole yoghurt.
  • Serve with coriander leaves and pomegranate pearls as a garnish. Drizzle additional sweet tamarind chutney and green chutney over top (optional).
  • You may add or remove it, and everyone’s taste varies. I like sweet chutney, so I sprinkle it more.
  • You may put the components together in whatever order you choose.
  • Garnish with a little extra sev to match the moniker.
  • If you don’t serve the puris right away, they’ll become soggy. I’ve attempted to show the treasure within the puris in the photos below.

Notes

  • Instead of combining the spices into the mashed potato and yoghurt, put the plain cooked potato into a puri and then sprinkle the spices and yoghurt on top of the potato.
  • You may make dahi puri chaat to your liking and assemble the components according to your preferences.
  • Roasted cumin powder, chaat masala, chilli powder, and a sprinkle of each make any chaat more delectable.
