Corn Feta and Black Bean Dip

I actually have had the idea for this dip in my head for awhile, just haven’t had time to do it. I thought of it one day when I was thinking about what kind of fritters I’d love to see: something with corn and feta cheese, like those dolmades from Greece, would be amazing! When I was making some corn and paprika chips, I thought of this dip and I knew it would be perfect.

As written above, I love a good party and love a good party food. Some of my favorites include corn chips and guacamole. My brother recently gave me a vegan recipe for corn fetta cheese that I have been dying to try. I love black beans and corn, so this was a match made in heaven.

Corn Feta and Black Bean Soup is a warm and comforting soup that is filled with lots of really tasty, healthy ingredients. The corn feta gives it a delicious creamy texture that matches perfectly with the beans and vegetables, while the black beans add a nice creaminess to the soup.

Choosing a meal to bring to a gathering may be difficult. This Corn Feta and Black Bean Dip is quick and easy to make, and the ingredients can be kept on hand for any last-minute parties or get-togethers!

I was in a Bunco club a few years ago, and one of the women brought the most delectable, unusual dip I’d ever seen! The ingredients didn’t make sense to me at first, but it didn’t matter since it tasted so delicious! I knew I had to make this delicious dip for my hubby when I came home. I believe I finally got it after a few attempts!

What is Shoepeg Corn, and how does it differ from regular corn?

“The corn was called for its peg-like shape,” according to TasteofHome.com. Shoepeg corn is sweeter than yellow corn and contains smaller kernels. If you can’t locate it in your grocery store, you may use white or yellow corn instead.”

Is it okay if I use frozen corn?

If you want to use frozen corn, be sure to thoroughly defrost it first! We use canned for this dish because we like the taste it provides and because it makes it so simple to prepare with no prep work!

Our Corn Feta and Black Bean Dip’s ingredients

  • Corn, White Shoepeg
  • Feta cheese, crumbled
  • Beans, black
  • Sugar
  • Apple Cider Vinegar is a vinegar made from apples.
  • Oil for cooking

To create our Corn Feta and Black Bean Dip, follow these steps:

Add rinsed and drained black beans, drained corn, and feta to a medium mixing bowl.

Add 3 tablespoons of oil, sugar, and vinegar to the mixture.

Combine all ingredients in a large mixing bowl and chill for at least 30 minutes before serving.

Ingredients

  • White Shoepeg Corn, 11 oz.
  • 6 ounce Feta Crumbles
  • Black Beans (15 oz.)
  • 3 teaspoons of sugar
  • Apple Cider Vinegar, 3 tbsp
  • 3 TBSP CHOICE OF COOKING OIL (vegetable or canola recommended)

Instructions

    1. Add rinsed and drained black beans, drained corn, and feta to a medium mixing bowl.
    2. Add 3 tablespoons of oil, sugar, and vinegar to the mixture.
    3. Combine all ingredients in a large mixing bowl and chill for at least 30 minutes before serving.
    4. Serve with tortilla chips to complete the meal.

Made with corn kernels, feta cheese, and black beans, this is a light, creamy dip that is perfect for parties or when you need something healthy to snack on. It can also be a great appetizer, subbing in other types of beans for the black beans for a variety of uses.
