Macaroni and cheese is a classic comfort food, but it is one that many of us get sick of eating as our waistlines widen. Thankfully, however, with a bit of time and a few simple ingredients, it is possible to make a delicious, healthy and comforting version from scratch. Healthy, homemade macaroni and cheese is a delicious, hearty, hearty meal made from a simple combination of pasta, cheese, cream, butter and milk.

I’m ready to make a batch of macaroni and cheese , but I’m not sure what equipment I need. It’s a tough decision to make because some brands of macaroni and cheese have lots of funky ingredients. What’s the best way to make macaroni and cheese? It’s a tough question, and it’s not easy to predict what equipment you’ll need.

I’m sure your family has a recipe for homemade macaroni and cheese, or at the very least pleasant childhood recollections of eating Kraft or Velveeta. The popularity of mac and cheese stems from the fact that it seldom disappoints.

What distinguishes an excellent sauce?

The foundation of every excellent mac and cheese is…cheese! I prefer to use a variety of cheeses (cheddar, monterey jack, and parmesan) to provide a strong and well-rounded cheese taste. As long as the cheeses melt nicely together, you may use a variety of them. If you want a creamy smooth texture, for example, don’t use a crumbly cheese like blue cheese since it won’t completely integrate with the other cheeses.

To make a béchamel sauce, I typically start by creating a roux, then adding milk and heavy cream. After that, I’ll season with salt, pepper, paprika, and ground mustard (ground mustard also helps the cheese get that golden color).

What kind of pasta should I use?

For this mac and cheese, I used Cavatappi pasta. Of course, elbows are the traditional choice, but I’ve also had success with shells, penne, and orecchiette. For a mac and cheese, any shaped pasta will suffice.

Long noodles, seasoned pasta (the tastes may conflict), and artisanal pasta, such as squid ink spaghetti, are all pastas I would avoid. Alternative pastas, such as chickpea or quinoa-based spaghetti, may be used in this dish. You may need to modify the pasta boiling time, but sticking to the package directions is the best option.

Variations on Mac and Cheese

You may take this recipe as a foundation and add modifications in a variety of ways.

Mac & Cheese with Ham: This recipe includes ham, making it a wonderful way to use up leftovers! Turkey Pot Pie Mac and Cheese: A mac and cheese base is combined with your favorite pot pie ingredients in this version. Cajun mac and cheese: With the addition of andouille sausage, peppers, and cajun seasoning, this version amps up the heat. Baked Mac and Cheese: This variation is baked with a tasty crumb topping.   • 1 pound pasta (dried) 
  • ½ Cup Butter
  • ½ Cup Flour
  • 12 quarts milk
  • 2 c. half-and-half
  • Salt
  • Pepper
  • 1 Tsp Paprika
  • 1 tsp Mustard (Ground)
  • 2 cups sharp cheddar cheese
  • 1 cup Cheddar Jack cheese

Storage Suggestions

Refrigerate any leftovers in an airtight jar for up to 4 days in the fridge. To reheat, warm in the microwave or on the stovetop until well warmed. Freezer: Store in an airtight container for up to 2 months in the freezer. To reheat, thaw in the microwave and then heat until well heated.

  • 1 pound of dried pasta elbows or cavatappi
  • 12 GALLON BUTTER
  • Flour (12 cup)
  • 12 quarts milk
  • 2 CUP HALFTIME AND HALFTIME
  • Salt
  • Pepper
  • 1 tablespoon paprika
  • 1 tsp Mustard (Ground)
  • 2 c. sharp cheddar cheese
  • 1 cup jack cheese

 

Instructions

 

 

  • Cook pasta according to package directions until it is al dente. Remove from the equation.

  • Melt butter in a big saucepan or dutch oven over medium heat. Stir in the flour until it is completely mixed. Cook until the flour is completely cooked and the roux has a nutty fragrance.

  • Slowly pour the milk into the roux mixture, whisking constantly until it is smooth and well combined. Toss in the half-and-half.

  • Season to taste with spices and salt and pepper.

  • Stir in the cheese until it is completely absorbed. Allow to cook for a few minutes until the sauce thickens.

  • Add the spaghetti to the sauce mixture and season to taste. Serve and have fun!
