Royal Icing Sugar Cookies for a Classic Wedding

Royal icing is one of the most popular decorations on a wedding cake. It’s made from sugar, water, and egg whites that are whipped together until stiff peaks form. This process can be done by hand or with an electric mixer.

Sugar cookies have been around for a long time. They are the perfect cookie to make when you want a classic wedding cake. The royal icing recipe will help you achieve this look.

Royal Icing Sugar Cookies for a Classic Wedding

Ingredients

  • 1 cup unsalted butter (225 g) at room temperature, cut into pieces
  • 1 cup (130 g) sifted icing sugar
  • 2 big yolks of eggs
  • 10 mL vanilla bean paste (2 tsp)
  • 2 1/2 cups all-purpose flour (375 g)
  • fine sea salt, 1/2 teaspoon (2.5 g)
  • 1 royal icing recipe (recipe follows)
  • Decorator’s sugar, dragées, and other edible embellishments

Icing Royale

  • 4 cups sifted icing sugar (520 g)
  • 3 tbsp meringue powder (14 g)
  • 6 tbsp warm water (90 mL)
  • Paste of food coloring (optional)

 

Instructions

  1. Beat the butter until smooth using electric beaters or a stand mixer equipped with the paddle attachment. Lastly, sift in the icing sugar. Work in the sugar on low speed, then raise to medium-high and beat for approximately 2 minutes, or until fluffy.
  2. In a separate bowl, whisk together the egg yolks and vanilla extract. Mix in the flour and salt until the dough barely comes together. Chill the dough for at least 2 hours after shaping it into two discs.
  3. Preheat the oven to 325 degrees Fahrenheit (160 degrees Celsius) and prepare two baking pans with parchment paper.
  4. Knead 1 disc of dough a bit to soften it, then roll it out to just under 1/4 inch (6 mm) thick on a lightly floured board.
  5. Cut out cookies using a 2- or 3-inch (5- or 7.5-cm) cookie cutter. Arrange 1 inch (25 mm) apart on the baking trays. Rep with the second dough disc, re-rolling any scraps as necessary.
  6. Bake the cookies for 12 to 14 minutes, or until the edges are slightly brown. Allow to cool on a wire rack.
  7. Make royal icing for piping or flooding. Sprinkle the cookies with decorator’s sugar or add dragées or other edible decorations as desired. Allow yourself a 4- to 6-hour drying time for the frosting.

Royal Icing

  1. In the bowl of a stand mixer equipped with the paddle attachment, combine the icing sugar, meringue powder, and water. On low speed, beat in the icing sugar until it is completely absorbed. Increase the speed to medium and beat for 5 minutes, or until the icing comes together and is fluffy.
  2. Add just a bit more water until the icing spreads on its own yet fully covers the biscuit to create a “flood” type of frosting that spreads over the surface of the cookie (thicker than glaze). As required, you may simply add additional water or icing sugar. As desired, add tiny quantities of food color paste.
  3. Fill a piping bag halfway with frosting and a tiny plain tip. Pipe a cookie outline and then fill it in with icing, or pipe dots and swirl the colors with a toothpick. Allow yourself a 4- to 6-hour drying time for the frosting.

Notes

These baked cookies, frosted or plain, may be stored in an airtight container at room temperature for up to 10 days. If you fully coat them with royal icing, they will last much longer (approximately a month). Baked cookies may be frozen for up to 3 months if they aren’t decorated. (Iced cookies should not be frozen since the frosting may break.) Before decorating, bring the cookies to room temperature.
